We often make these chicken gyros for a busy weeknight dinner option. I usually make the chicken and cucumber salad ahead of time on a Sunday so during the week we can simply lay everything out on the table and enjoy!

Ingredients for chicken gyros with tzatziki and cucumber salad
To make this easy greek-style chicken gyros recipe, you’ll need a few ingredients that you can get at almost any grocery store or even online!
Here’s what we are working with:
- pita breads or flat breads, preferably warmed
herb-crusted chicken
- chicken breasts, butterflied and pounded thin
- salt and pepper
- dried oregano
- garlic powder
- paprika
- olive oil
tzatziki Sauce
- greek yogurt
- dill pickles
- garlic cloves
- lemon juice
- olive oil
- salt and pepper
cucumber salad
- cucumber
- cherry tomatoes
- red onion
- parsley
- salt and pepper
How to make chicken gyros with tzatziki sauce and cucumber salad
herb-crusted chicken
- Butterfly and pound thin 2 chicken breasts. On both sides of the chicken liberally coat with salt, pepper and spices. Drizzle over olive oil and brush to mix with the seasonings on both sides.
- Heat 2 tbsp of oil in a skillet pan over medium high heat.
- Cook the chicken for 3 to 4 minutes on each side, until golden brown and cooked through (cooking time depends on size of chicken).
- Remove the chicken onto a plate. Cover loosely with foil and allow to rest for 5 minutes before cutting into bite size pieces and serving.
tzatziki sauce
- Cut the dill pickle slices into finely chopped pieces.
- Placed finely chopped dill pickles into a bowl. Add remaining ingredients then mix to combine. Set aside for at least 10 minutes for the flavors to blend.
cucumber salad
- Combine all cucumber salad ingredients in a bowl.
How to assemble the gyros
- Cut the chicken into bite size pieces, if preferred.
- Warm pita or flatbread and place it on a piece of parchment paper. Place some salad down the middle of the bread, then top with chicken and tzatziki.
- Roll the wrap up, enclosing it with the parchment paper. Twist the end with the excess parchment paper to secure it and cut if desired.
I prefer to lay everything out on a table with a pre-cut parchment paper “plate” for everyone and then have the chicken gyros served in the form of an assembly line where each person can make their own gyro!
