The most delicious and easy egg salad recipe on toasted pieces of bread in the shape of a bunny along with carrot and celery ranch dippers and fresh fruit. This lunch will have you and your little one doing the bunny hop! Who’s ready for spring??

Ingredients

2 slices of your favorite bread, egg salad (recipe below), hardboiled egg, cotton candy grapes, strawberries, baby carrots, celery, orange, ranch dressing.

Optional: flower food cutter, candy eyes, and toothpicks

Directions

  1. Begin making egg salad (see recipe below).

2. Toast two slices of bread; using the edge of a glass cup, cut-out 2 circles and set aside.

3. Prepare cut-outs; slice a handful of cotton candy grapes into rounds and place into the main compartment of the lunch box. Using about 4 whole strawberries, slice each one in half and then use a flower cut-out to make 8 strawberry flowers. Peel and slice a cutie orange into rounds. Cut a celery stick to form about 6 quarter inch pieces.

4. Place a good amount of the egg salad between the two pieces of bread and place on top of the grapes into the main compartment of the lunch box. Cut one hard-boiled in half length-wise and place each on either side of the sandwich at the top.

5. Place the eyes on top of the sandwich then the bottom piece of the strawberry to form the bunny’s nose. Use a thin slice of strawberry to form the bunny’s smile. Thinly cut a baby carrot lengthwise into 6 pieces (3 on each side) and place on top to form the bunny’s whiskers.

6. Place about a tablespoon of ranch dressing in one side compartment. Using a toothpick, first press down into a baby carrot and then add a piece of celery to top. Add 6 of these to the ranch dressing dip.

7. Into the other side compartment, place the cutie orange rounds and strawberry flower cut-outs.

  • In a medium sized bowl combine chopped eggs with mayonnaise, chopped dill pickles, dijon mustard, dill, salt and pepper. Mix well to combine all ingredients.
