Can I make this recipe a meatless meal?

Yes! I like to add in the Italian chicken sausage that I get from Aldi for the flavor it brings, but you can absolutely make this meal without the sausage and it will still yield the same level of flavor. I would recommend doubling the amount of cherry tomatoes and adding a teaspoon more of oregano if making this a vegetarian dish.

How to make spaghetti squash nests

  1. Preheat oven to 425 degrees F.
  2. Trim squash ends and cut the squash crosswise into 4 equal rounds. Scoop out the seeds and discard. Place the rounds on a rimmed baking sheet, leaving room in the middle for the other ingredients.
  3. Place cherry tomatoes and sausage in the middle of the baking sheet and all around the squash rounds. Place the whole garlic head directly in the middle of the baking sheet. Drizzle olive oil over the entire baking sheet making sure to coat the squash rounds. Season with salt, pepper and oregano.
  4. Wrap the whole garlic head in a loose foil tent, adding a splash of olive oil to it before sealing.
  5. Roast until the squash is tender and garlic feels soft when pressed upon, 35-40 minutes.
  6. Using a fork, shred the squash in the center of the rounds into long strands.
  7. Squeeze and divide the roasted garlic into each of the spaghetti squash nests. Divide the tomatoes and sausage among the nests.
  8. Sprinkle over the parmesan cheese and garnish with fresh basil, if desired.
