- 1 jalapeno pepper, ribs and seeds removed, diced
- 1 small red onion, chopped

- 1 avocado, diced
- 1 cup garlic stuffed green olives, sliced
- 1 cup crumbled feta or queso fresco
- 2 tbsp fresh cilantro or parsley

- ¼ apple cider vinegar
- 2 tsp crushed or ground red pepper, more for heat
- 1 tbsp honey , more for sweetness
- 1 lime , juiced
- ½ olive oil
- salt and pepper, to taste
