We always look forward to making this easy corned beef and cabbage recipe every year for St. Patrick’s Day. Honestly, it has become quite a staple in our home when wanting a comforting, nutritious meal with very little fuss. You just can’t beat it; super tender corned beef cooked to perfection along with buttery rich cabbage and sweet carrots all come together beautifully in the slow cooker.
This year my kids wanted their corned beef and cabbage served with mash potatoes and that’s exactly what they got! Now I only want my corned beef served alongside mashed potatoes to really soak up all the juice that comes from the corned beef, cabbage and carrots being cooked together. We served ours with Palmini Mashed Hearts of Palm for a low carb mashed potatoes option and it was FABULOUS!
Ingredients for crockpot corned beef and cabbage with carrots
To make this easy slow cooker corned beef recipe, you’ll need a few ingredients that you can get at almost any grocery store or even online!
Here’s what we are working with:
- corned beef – we love ButcherBox corned beef! Flat cut or point cut, just be sure to save the spice packet that comes with it to use for cooking.
- carrots – whole peeled carrots. I also like to use rainbow baby carrots for this recipe.
- garlic cloves – peeled or minced
- water – used to create that wonderful juice, can use beef broth if desired for more intense flavor.
- cabbage – cut into thin wedges, you will need about a half a head of cabbage for this recipe.
- mashed potatoes – homemade or store-bought, mashed potatoes are optional for this recipe. If you desire a low carb mashed potato option, Palmini Mashed Hearts of Palm makes a wonderful low carb addition.
- horseradish cream sauce – homemade or store-bought works great. This is also optional but highly recommended for serving. We love Inglehoffer Cream Style Horseradish!
How to make crockpot corned beef and cabbage with carrots
- Into the crockpot add corned beef and sprinkle over the included seasoning packet.
- Add the carrots, cabbage cut into thin wedges and garlic cloves to the top.
- Pour over 2 cups water or beef broth if desired
- Cook on high for 5 hours or low for 8 hours.
- Remove meat onto a cutting board and slice against the grain into strips. Serve with cabbage and carrots, drizzle juice from the crockpot over.
- Optional for serving: mashed potatoes and horseradish cream sauce.
