- 3-4 bell peppers (any color)
- onion
- garlic
- Rotel, diced tomatoes and green chilies
- tomato sauce
- shredded mozzarella or cheddar cheese
- broth
- italian seasoning
- parsley or cilantro for garnish, optional

Cook the Meat: In a large skillet over medium-high heat, cook the ground beef or turkey until browned. Break it into crumbles as it cooks. Drain any excess fat if necessary.
Add in the Veggies: Add the diced bell peppers, chopped onion, and minced garlic to the skillet. Sauté for about 3-4 minutes until the vegetables start to soften.
Combine the Rice and Seasonings: Mix in the uncooked rice, canned tomatoes and green chilies (with juice), tomato sauce, broth, and Italian seasoning; season with salt and pepper to taste.
Cook the Rice: Bring the mixture to a simmer. Once it’s simmering, cover and cook for about 20 minutes, or until the rice is cooked through and has absorbed most of the liquid.
Add Cheese: Remove the lid and stir in the cheese until melted and creamy.
Garnish and Serve: Serve hot, garnished with fresh parsley or cilantro if desired. Enjoy!
