Falafel Waffles
This waffled falafel recipe takes all the flavors you know and love from a traditional falafel, and puts them in a crispy and delicious waffle served with a fresh creamy cucumber and chickpea salad.
I make these falafel waffles all the time because they’re low in fat, ready in just 5 minutes with simple ingredients, and so delicious! You are simply adding all ingredients to a blender and then onto a waffle maker.
I love adding a creamy cucumber and chickpea salad into the mix because it takes the freshness and texture level to a whole new dimension.
Ingredients for falafel waffles
To make these falafel waffles and creamy cucumber and chickpea salad, you’ll need a few simple ingredients that you can get at almost any grocery store or even online!

For the falafel waffles
- chickpeas
- parsley
- red onion
- garlic cloves
- smoked paprika
- ground cumin
- ground coriander
- chili powder
- ground gloves
- salt

- lemon, zest and juice
- baking powder
- arrowroot
- egg, optional

- greek yogurt
- olive oil
- lemon, zest and juice
- cucumber
- cherry tomatoes
- red onion

- mint

How to make falafel waffles and creamy cucumber chickpea salad
To make the falafel waffles I recommend using a mini waffle maker. It’s one of those kitchen gadgets that is useful to have because it is so versatile among different recipes–think, chaffles (low carb waffles made out of cheese)! I like the mini version of a waffle maker because it takes up less space and works like a pro!
Here’s how to make these super delicious and incredibly satisfying falafel waffles along with a creamy cucumber and chickpea salad. I definitely recommend serving this goodness with a side of your favorite tahini sauce for dipping or drizzling over!
- Rinse the chickpeas and chop parsley, onion and salad veggies if making.
- Make the waffle batter; add all the waffle ingredients to a blender or food processor and pulse until smooth yet still a little chunky.
- Preheat and season a mini waffle maker with nonstick spray. Add the mixture, about 1/4 cup at a time to coat the waffle maker. Cook 4-5 minutes, or until the light indicator comes on and set aside.
- Make the salad; in a medium bowl combine all ingredients together making sure to coat with the greek yogurt and olive oil.
- Serve falafel waffles with the salad and side of tahini sauce, if desired.

- 1 (15 oz) can chickpeas, drained and rinsed
- ¼ cup parsley, chopped
- ¼ cup red onion, chopped
- 3 garlic cloves
- ½ tsp smoked paprika
- ½ tbsp ground cumin

- 2 tbsp arrowroot powder, or cornstarch
- 1 egg, optional

- ½ cup greek yogurt
- 2 tbsp olive oil
- 1 lemon, zest and juice
- 1 cucumber, diced
- ½ cup cherry tomatoes, halved
- ¼ cup red onion, diced
- 1 tbsp parsley, finely chopped
- 1 tbsp fresh mint, finely chopped
