This farro and asparagus with ground beef bowl has to be one of our absolute favorite grain bowl recipes. This dish not only checks all the boxes for a well-rounded meal, but it’s also incredibly delicious and easy to make.

And there’s farro involved, which also happens to be my favorite of all the grains. So naturally this recipe has my full heart! Get ready to add this incredibly nutritious farro bowl to the weekly rotation.

To make this easy and delicious farro and asparagus grain bowls with ground beef recipe you’ll need a few ingredients that you can get at almost any grocery store or even online!

  • asparagus
  • olive oil
  • onion
  • garlic
  • ground beef
  • ground cumin
  • smoked paprika
  • cherry tomatoes
  • arugula
  • crumbled feta cheese
  • lemon, wedges and juice

how to make farro and asparagus grain bowls

Cook the farro according to the package instructions. Once cooked, drain any excess water and set aside.

Preheat oven to 425 degrees F. Place the asparagus on a baking sheet and drizzle with olive oil, season with salt and pepper to taste. Roast the asparagus in the preheated oven for about 12-15 minutes, or until tender and slightly charred.

In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and cook until the onion is translucent and fragrant. Add the ground beef to the skillet and cook, breaking it up with a spoon, until browned and cooked through. Stir in the ground cumin, smoked paprika, salt, and pepper. Cook for another 1-2 minutes.

Divide all ingredients into 4 serving bowls; drizzle over fresh lime juice and serve with fresh lemon wedges. Serve immediately.

Ingredients 

  • 1 cup farro
  • 1 bunch asparagus, trimmed and cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 4-5 garlic cloves, minced
  • 1 lb ground beef
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • salt and pepper, to taste
  • 1 cup arugula
  • ½ cup cherry tomatoes, halved
  • ¼ cup crumbled feta cheese
  • lemon, juice and wedges
