Santa Penguin English Muffin Sandwich

This Santa penguin sandwich creation made with an English muffin and topped with a strawberry marshmallow Santa hat will surely make you and your little one PEN-GRIN 🙂

Ingredients

English muffin

Optional: Holiday Confetti Sprinkles, 1 slice ham or turkey, 1 slice cheese.

Directions

1. If using turkey or ham and cheese slices, use a glass jar or cup to make 2 circles (about the size of the English muffin). Place the circles in the middle of the main container and the English muffin on top. **I usually toast the muffin first and spread a small amount of butter on it.

2. Create a triangular spread of cream cheese on the top of the muffin and place 5 blueberries inside to resemble the penguin’s head. Using a small amount of cream cheese to stick, place candy eyes or if you wish to add, blueberries on top for the penguin’s eyes.

3. Cut one clementine slice in half and secure down with cream cheese for the penguin’s beak. Add two clementine slices to the bottom of the muffin for the penguin’s feet.

4. Place a circle of blueberries around the muffin.

5. Cut a strawberry in half lengthwise. Using a toothpick, stick one end into the strawberry half and place a mini marshmallow on the top of the toothpick. Place this on top of the penguin’s head to resemble a Santa hat.

6. In one side compartment spoon in the vanilla yogurt. If using, top with Holiday Confetti Sprinkles.

7. In second side compartment place Goldfish Crackers.

I hope you and your little one enjoy this super fun holiday lunch creation! To hold everything in place, cover each compartment with tin foil. For the main compartment, add a ball of tin foil to the middle that touches and secures the lid in place.
