Ingredients for Easy One Pot Mascarpone Lasagna
To make this easy one pot lasagna, you’ll need a few ingredients that you can get at almost any grocery store or even online. You may already have a number of these ingredients on hand. You can make a number of substitutions with this recipe. For example, you can use fresh or canned spinach, risotto or mascarpone cheese, or choose to make this dish sans meat. This is an extremely flexible recipe which gives it extra bonus points!

- sweet Italian sausage
- no boil lasagna noodles
- pasta sauce
- cherry tomatoes
- spinach
- red onion
- mascarpone cheese
- shredded mozzarella cheese
- grated parmesan cheese
- roasted garlic powder
- italian seasoning
- dried oregano seasoning
- chicken broth
- egg
How to Make Easy One Pot Mascarpone Lasagna
- Heat olive oil in a large pot over medium heat. Add ground beef and sweet Italian sausage and cook until browned, about 3-5 minutes; drain excess fat.
- Add in diced red onion, spinach, cherry tomatoes, pasta sauce, garlic powder, oregano, and Italian seasoning; season with salt and pepper to taste. Mix well.
- Bring to a simmer, add in halved lasagna noodles and 2 cups water or chicken broth. Bring to a boil; cover, reduce heat and simmer until pasta is cooked through, about 12-14 minutes.
- While pasta cooks, in a medium bowl combine mascarpone cheese, parmesan cheese and 1 egg. Mix well and season with salt and pepper to taste.
- Turn-off heat. Stir in mozzarella cheese until well combined. Using a small ice cream scoop, top with dollops of the mascarpone mixture and cover until heated through, about 3-5 minutes.

- ½ pound ground beef
- ½ pound sweet Italian sausage
- 1 small red onion, diced
- 1 cup cherry tomatoes, halved
- 2 cups spinach
- 2 cups pasta sauce
- 1 teaspoon roasted garlic powder
- 1 teaspoon dried oregano seasoning
- 1 teaspoon Italian seasoning
- 8 ounces no boil lasagna noodles , broken in half
- 2 cups chicken broth, or water
- 1 egg
- 8 ounces Mascarpone Cheese
- ¼ cup grated parmesan cheese
- ½ cup shredded mozzarella cheese
- salt and pepper, to taste
- fresh parsley leaves, chopped, if desired for serving
Instructions
- Heat olive oil in a large pot over medium heat. Add ground beef and sweet Italian sausage and cook until browned, about 3-5 minutes; drain excess fat.

- Bring to a simmer, add in lasagna sheets (broken in half) and 2 cups water or chicken broth. Bring to a boil; cover, reduce heat and simmer until pasta is cooked through, about 12-14 minutes.
- While pasta cooks, in a medium bowl combine mascarpone cheese, parmesan cheese and 1 egg. Mix well and season with salt and pepper to taste.
