Rainbow Mini Bagel Fruit Bites Lunchbox

Rainbow mini bagel fruit bites are mini bagels smothered in a sweet, light and fluffy dip with layers of fresh fruit. These delicious bites make an easy and yummy snack or lunchbox option.

We love making rainbow mini bagel fruit bites as a quick and fun snack. My kids enjoy these little bites of fruity goodness so much that I will often pack these mini bagel fruit bites in their lunchbox for school.

After a long, cold winter here in Pennsylvania, we are always looking forward to the sunshine that spring brings. I love creating food for my kids inspired by the seasons and these fresh and bright bagel fruit bites are just what we need to give us those springtime vibes! Easy to make, colorful and yummy–there’s so many reasons to love these delicious fresh fruit mini bagel bites!

Ingredients for rainbow mini bagel fruit bites lunchbox

To make this fun and delicious rainbow mini bagel fruit bites lunch meal prep, you’ll need a few ingredients that you can get at almost any grocery store or even online!

This will make 4 lunchbox containers. I love these 3 compartment food containers that I found on Amazon!

Here’s what we are working with:

  • mini bagels
  • cream cheese
  • marshmallow creme
  • fresh fruit finely chopped and in colors of the rainbow: strawberries (red), oranges (orange), green grapes (green), whole blueberries (blue).
  • mini marshmallows
  • vanilla yogurt and sprinkles, optional for lunchbox
  • preferred crackers, optional for lunchbox

How to make rainbow mini bagel fruit bites lunchbox

  1. Mix together softened cream cheese and marshmallow cream with a hand mixer until smooth and well combined.
  2. Toast bagels and cut each half in half to form 8 crescents.
  3. Cut strawberries, oranges and green grapes into small bite size pieces.
  4. Smear a layer of the cream cheese mixture on each bagel followed by a layer of strawberries at the top, then oranges followed by the green grapes. Place 2-3 blueberries at the bottom.
  5. Using a tooth pick cut in half, attach two mini marshmallows on either side to form the clouds of the rainbow.
  6. Serve with sprinkled vanilla yogurt and preferred crackers for complete lunchbox, optional.

Why prep lunches for school?

To make meal planning more consistent and practical in my house, I aim to include four school lunch preps for my two kids in our weekly meal prep rotation. This helps us save money and ensure that two days of the week, the kids have well balanced meals that happen to be fun and festive, yet simple enough to put together in less than 15 minutes. 

In these lunch preps I try to include a variety of colors as well as a good balance of the essential food groups so that my kids are getting exposure to different foods in a fun and exciting way!

  • ½ orange, finely chopped
  • 1 handful green grapes, finely chopped
  • ¼ cup blueberries
  • 8 mini marshmallows
  • vanilla yogurt and sprinkles, optional for lunchbox
  • preferred crackers, optional for lunchbox
