Flip flop protein pancakes are the best way to get your summer started off on the right foot! An easy and fun recipe for protein pancakes, made with simple ingredients and guaranteed deliciousness!

I created these fun summer protein pancake flip flops to celebrate my kids’ official start to summer vacation. AND if I’m being honest, mine too because as a teacher I am always looking forward to the days when I am able to be home with my kids and start our days with a yummy, balanced breakfast!

I love having the ability to make a delicious nutritional breakfast for me and the kids when I am home for the summer. Our days are usually jam-packed with fun in the sun so starting the day off right is so incredibly important. Protein pancakes are often on the menu! They are easy to make and incredible delicious keeping us feeling good throughout our busy day.

Ingredients for flip flop protein pancakes

Here is what we are working with to make these fun and delicious summertime breakfast treat :

  • protein pancake mix – we love Trader Joe’s Buttermilk Protein Pancake Mix, yum!
  • almond milk beverage
  • peanut butter
  • granola
  • apple slices
  • blueberries
  • strawberries
  • orange
  • maple syrup, optional for serving

How to make flip flop protein pancakes

  1. Mix together 2 cups protein pancake mix with 2 cups almond milk. Combine until smooth and place into a squeeze bottle (an expired condiment bottle works great!).
  2. Heat a nonstick griddle or a large 14-inch nonstick skillet over medium heat (not higher). Spray with oil.
  3. Using the squeeze bottle form the outline of a flip flop with the batter and then fill-in the inside of the sandal shape. Cook the pancakes until they bubble on top, one minute or less. Flip and cook them for just a few more seconds on the second side.
  4. Place a small amount of peanut butter at the top of the flip flops and then secure with apple slices to form the sandal straps.
  5. Decorate with crushed granola, blueberries, strawberries and orange slices. Serve with maple syrup, if desired.

We sure hope you enjoy these fun and delicious flip flop pancakes as much as our little tribe has time and time again. Please leave us a star review and comment if you make these beach-ready sandal protein pancakes!
