Today, I will be sharing with you one of my most favorite recipes: easy shrimp ceviche! This delicious dish is perfect for a summertime appetizer or a light meal. Plus, it’s very quick to make with cooked shrimp.

Traditional ceviche is a popular Latin American recipe that typically features raw seafood marinated in a citrus juice, such a lime or lemon. Then the acidity of the citrus juice “cooks” the raw seafood, changing its texture and flavor.
In this easy shrimp ceviche recipe, we use cooked shrimp but you can use fresh raw shrimp if you prefer. We will then add in other south-of-the-border ingredients like tomatoes, avocado, onion, and cilantro to give the ceviche its freshness, color, and crunch.

Here’s what we are working with:
- shrimp – this recipe can be made using chopped shrimp or bay shrimp which can be found pre-cooked and ready to use. If using raw shrimp, ensure that it’s very fresh. We prefer to used cooked shrimp for its texture. Additionally, cooking the shrimp can kill any harmful bacteria.
- citrus – fresh citrus juice is the magic in this dish. We will be using fresh lemon, lime and orange juice in this shrimp ceviche recipe.
- chopped vegetables – tomatoes, cucumber, onion, jalapeño, avocado and cilantro leaves all bring a wonderful color and texture to this refreshing dish.

- Pour the lime, orange and lemon juice over the mixture. Season with salt and pepper to taste.

- 2 lbs cooked shrimp, chopped
- 1 cup roma tomatoes , diced
- ½ cup red onion, diced
- ½ cup cilantro leaves, finely chopped
- 1 cucumber, diced
- 1 jalapeno , ribs and seeds removed, diced
- 1 avocado, diced
- ½ cup lime juice
- ⅓ cup orange juice
- ¼ cup lemon juice
- salt and pepper , to taste
Instructions
- Place the cooked shrimp, tomatoes, cucumber, jalapeño, onion, avocado and cilantro a bowl.
- Pour the lime, orange and lemon juice over the mixture. Season with salt and pepper to taste.
- Cover and refrigerate for 15-30 minutes.
- Serve with tortilla chips or crackers of your choice, optional.
