Prepare the chicken: Cut into bite sized pieces and place into a bowl; drizzle over olive oil and seasonings, stir to coat the chicken.
Heat a skillet over medium heat. Once skillet is hot, add the chicken to it. Cook 3 minutes on each side, until golden brown on all sides and cooked through (165 degrees F internal temperature).
Add the buffalo sauce to the skillet, stir well to coat the chicken; cook an additional 1-2 minutes. Remove from heat and set skillet aside.
