Toasted English muffins with fresh mozzarella in the shape of a ghost. This ghost food art English muffin pizza lunchbox is spooky, yummy and fun for Halloween!

Goblins, witches and pumpkins, oh my! There are so many fun themes to go with the fall time fun. One thing that we enjoy making throughout all seasons are English muffin pizzas; adding a little friendly ghost to this one, easily made this my daughter’s favorite version of the pizzas we enjoy so much.

Ingredients: English Muffin, pizza sauce, 2 slices mozzarella cheese, 1 slice cheddar cheese (if creating the BOO), black olives, cotton-candy grapes, clementine, vanilla yogurt, drop of natural food coloring – yellow and red, green sprinkles and Pillsbury Ready to Bake Pumpkin Cookies.

Directions:

1. Cut English Muffins in half. Spread pizza sauce on the bread. Cut-out a ghost like shape with scissors or a food cutter into the mozzarella cheese slice. Place the ghost like shape on top of the pizza sauce. **Optional: Use letter cutters to cut-out “BOO” with orange cheddar cheese.

2. Cut eyes and mouth if you wish to add, with black olives. You can put the olives on top of the face before or after cooking. I usually do it after while the cheese is still hot and melty.

3. Bake in oven at 350° for 5-7 minutes or until the cheese is melted. While pizza is cooking cut grapes in half lengthwise. Place in main compartment of lunch box. Place the English muffin pizza on top after cooling.

4. In one side compartment place vanilla yogurt and stir in 1 drop each of the natural food coloring until orange. Place in the sliced clementine. Sprinkle with just a pinch of green sprinkles.

5. In second side compartment place Pillsbury pumpkin cookies or even apple slices shaped like leaves. You can rub the apple slices with lemon wedges to stop browning.

I hope you and your little one enjoy this super fun fall lunch creation! To hold everything in place, cover each compartment with tin foil. For the main compartment, add a ball of tin foil to the middle that touches and secures the lid in place.
