Mini Meatball Subs (Easy Air Fryer Recipe!)

Made in the air fryer and wrapped in a flaky croissant pastry, these mini meatball subs are perfect for an easy game day appetizer or a delicious school lunch option. Made with a few simple ingredients and ready to go in no time at all.

These meatball sub skewers are always at the top of the menu when game season begins. They are super easy to make and incredible delicious to eat. My kids love these mini meatball sandwiches so much that I tend to include them in their school lunchboxes A LOT!

Made in the air fryer and wrapped in a flaky croissant pastry, these mini meatball subs make a great appetizer or quick, easy and delicious lunch or dinner option. These little cheesy balls of goodness is a recipe that your whole family will love!

ingredients for mini meatball subs lunchbox

  • crescent rolls
  • mozzarella mini balls or string cheese cut into cubes
  • frozen meatballs, slightly warmed
  • grated parmesan cheese
  • marinara sauce, optional for serving
  • sport food picks, optional for serving
  • fresh fruit, optional for lunchbox side
  • preferred sweet treat, optional for lunchbox side

how to make mini meatball subs

  1. Heat the meatballs slightly through in microwave.
  2. Open the crescent rolls and in each triangular piece place a meatball and mozzarella ball inside; sprinkle over grated parmesan cheese and roll from top to bottom to form 8 balls.
  3. Preheat air fryer to 400 degrees; lightly spray basket and place the balls inside, leaving room for the dough to rise.
  4. Air fry for 3-4 minutes, until dough is puffed and golden.
  5. Place a toothpick into each ball and serve with marinara sauce if desired.
  6. Into the side compartments of lunchbox (if using), place fresh fruit and preferred sweet treat.

why prep lunches for school?

To make meal planning more consistent and practical in my house, I aim to include four school lunch preps for my two kids in our weekly meal prep rotation. This helps us save money and ensure that two days of the week, the kids have well balanced meals that happen to be fun and festive, yet simple enough to put together in less than 15 minutes.
