This Mississippi chicken is fall-off the bone, easy to prep, and incredibly flavorful. This is a family favorite tried and true crockpot recipe. It’s super simple, involves 4 ingredients and comes out perfect every time!
This recipe is a spin off of the infamous Mississippi Pot Roast. Most versions of this dish have butter in them, while free to add if you are sticking with a more keto-ish diet, chicken thighs make this the best of both worlds because they themselves offer a rich buttery taste and protein. We love ButcherBox chicken thighs which are pre-packaged bone-in skin-on chicken thighs; so incredibly flavorful!

Here’s what we are working with for this recipe:
- chicken thighs – we prefer bone-in for that extra punch of flavor, but you can also choose to debone prior to cooking. If chicken thighs are just not your thing, you can use chicken breasts instead for this recipe.
- pepperoncinis – sliced or whole, you can’t go wrong! We used a whole jar of these for our recipe, but if you prefer less eat, you can choose to add less pepperoncinis to your crockpot Mississippi chicken recipe.
- ranch packet seasoning – all the flavor you need in one little packet; we love using ranch dip seasoning packets in our crockpot meals!
- onion soup and dip packet mix – if we are making a crockpot recipe, chances are pretty high that this is included along with the ranch packet! So much flavor!

How to make crockpot Mississippi chicken
- Add the chicken to the crockpot and sprinkle over the ranch seasoning mix, onion soup mix, pepperoncinis and juice. If you do not prefer the heat, I would recommend replacing the juice with 1/2 cup water.
- Cover and cook on low for 7 hours or on high for 4 hours
- Serve the chicken thighs whole or shredded with pepperoncinis over your choice of side.

Ingredients
- 1 pound chicken thighs , 4-6 thighs
- 1 ounce packet ranch dressing mix
- 1 2 ounce packet Lipton Onion Soup and Dip Mix
- 1 12 ounce jar pepperoncini peppers , save ½ cup of juices, discard the rest OR use ½ cup water if you prefer less heat
Instructions
- Add the chicken to the slow cooker.
- Sprinkle over the ranch seasoning mix, onion soup mix, the pepperoncinis and 1/2 cup of juices from the jar. If you prefer less heat, skip the pepperoncini juice and add 1/2 cup water instead.
- Cover and cook on low for 7 hours or on high for 4 hours.
- Serve the chicken thighs whole or shred them all. Serve with loaded mashed cauliflower, rice or potatoes.
