Berry Toast with Homemade Marshmallow Fluff

Add this red, white and blue berry toast to your summer celebrations! It’s festive, yummy and made with a delicious homemade marshmallow fluff.

Here’s a sweet and easy treat to add to your 4th of July celebration! My daughter and I had so much fun making this, because well…it’s sweet and there was homemade marshmallow fluff being made.

Think of this as the fireworks of peanut butter and fluff sandwiches- the grand finale! The fresh fruit gives it an extra special taste of summer and you can create this and make it your own in so many different ways.

Just toast a piece of bread and layer it with peanut butter. Then add your marshmallow fluff and berries. For the people creations, I used apple, strawberry, blueberry and celery and then created the hair with peanut butter and chocolate.

You could simply serve this with apple slices, extra strawberries and chocolate. I love these food cutters for the fruit and these letter cookies are equally delicious as they are fun to add to any food creation!

Ingredients

To make this easy homemade marshmallow fluff, you’ll need a few ingredients that you can get at almost any grocery store or even online!

Here’s what we are working with:

  • egg whites
  • granulated sugar
  • water
  • vanilla extract
  • lemon juice

How to make homemade marshmallow fluff

  1. With a hand mixer, begin beating egg whites to soft peaks. Add in the lemon juice once the peaks begin to form. 
  2. In a small saucepan, combine sugar, water and vanilla and bring to a boil.
  3. Turn mixer back on low speed, and slowly drizzle the hot syrup into the egg whites.
  4. Turn speed up to medium-high, and beat until the egg whites cool down to room temperature.
  5. Serve immediately or store refrigerated for a couple days.

Ingredients 

For the berry toast

  • 1 slice bread, toasted
  • 1 peanut butter
  • fresh strawberries
  • fresh blueberries
  • marshmallow fluff

For the homemade marshmallow fluff

  • 2 egg whites
  • ½ cup granulated sugar
  • ¼ cup water
  • 1 tsp vanilla extract
  • 1 tsp lemon juice

Instructions
