To make this easy and protein packed breakfast sandwiches recipe you’ll need a few ingredients that you can get at almost any grocery store or even online!

Here’s what we are working with:

  • english muffins
  • eggs
  • greek yogurt
  • sausage patties (cooked) or your choice of protein like bacon, turkey sausage, or ham.
  • slices of cheddar cheese

Preheat Oven: Preheat your oven to 350 degrees F.

Prepare Muffins: Split the English muffins and place them cut side up on a baking sheet. Lightly toast them in the oven for about 5 minutes. Remove from the oven and set aside.

Prepare and Cook Eggs: Crack the eggs into a large bowl. Add the greek yogurt; season with salt and pepper to taste. Whisk until well combined.

Pour the egg mixture into a greased 9×13-inch baking dish.

Bake in the preheated oven for about 15-20 minutes, or until the eggs are set. Remove from the oven and let cool slightly.

Cut the baked eggs into 8 squares.

Assemble Sandwiches: On the bottom half of each English muffin, place one square of baked eggs. Add one sausage patty on top of the eggs. Place a slice of cheddar cheese on top of the sausage. Close the sandwich with the top half of the English muffin.

Wrap and Freeze: Wrap each sandwich tightly in plastic wrap or aluminum foil. Place the wrapped sandwiches in a large ziplock bag or airtight container.

Freeze up to 1 month.

To Reheat: Unwrap a sandwich and wrap it in a paper towel. Microwave on high for 1-2 minutes, or until heated through. You can also reheat in a preheated oven at 350 degrees for 10-15 minutes if you have more time.
